Banana muffins

Mix half cup semi skim milk with 1 cup no fat biodynamic natural yoghurt and half cup apple juice, one third cup cold pressed grapeseed oil, 2 beaten eggs, a splash of vanilla extract in a jug and set aside. Peel 2 large overripe bananas and mash.  Turn oven to 180 degrees (C) or 350 (F) to heat.

In a bowl mix 1 cup self raising flour with one cup nut meal.  Throw in one cup roughly chopped walnuts or pecans or whatever nuts you have to hand. Stir through 1  tsp baking soda.

Add wet ingredients to dry, place in muffin tins lined with paper cups.

Bake on middle shelf for 10 minutes; voila!
