Pancakes Anyone???

Ingredients: 2 eggs
, 2 tablespoons organic coconut oil-melted, 2 tablespoons coconut milk, 1 teaspoon pureed apple, 
¼ teaspoon Himalayan Rock salt, 
2 tablespoons sifted organic coconut flour, 
¼ teaspoon baking powder, 1/4 teaspoon baking soda.

Method:  Blend together eggs, oil, coconut milk, pureed apple and salt. Combine coconut flour with baking powder and thoroughly mix into batter. Heat 1 teaspoon of coconut oil in a skillet. Swirl all over pan, to coat.  Spoon batter onto hot skillet making pancakes about 2 ½ to 3 inches in diameter. Batter will be thick, but will flatten out when cooking. Makes about 8 pancakes.

My challenge this next three weeks is delicious, elimination diet 3.0 compliant food that is vegetarian ( I am including eggs – but no conventional flour/s and or grain/s of any sort. )  BUT including sufficient protein.  I admit these are delicious and it was an issue limiting my intake – especially as I pureed some strawberries and served them like a sauce drizzle over pulped mixed berries, and sprinkled with a tablespoon of crushed, soaked raw cashews….
