Throw some quality organic beef (1 kilo – 2.2 lbs) into a food processer and whizz until it is well and truly minced. Throw in an onion, 3 cloves of garlic, three shallots, some continental parsley, a red chili, 2 tablespoons of cumin, 1 tablespoon of coriander seeds and process with one organic egg until well combined.
Using a tablespoon measure and wet hands, I form small amounts into balls and place these side by side on a cake cooling rack within a baking tray. These cook quickly, and any fat which may be there drains to the bottom of the tray.
I cool these and then portion them into containers for the freezer – ready to pull out and add when the fancy takes me, or alternately to feed the multitudes when they arrive.
