I did throw a beef and mushroom ragout into the slow cooker for tomorrow. I used my trusty Vitamix blender to liquify half a head of celery, two zucchini, and 200gms of spinach which I put in the slow cooker with a kilo ( just over two pound) of cubed chuck steak (tough cut of beef). I made the cubes a tad largish. I took two red onions and peeled and quartered them and I crushed and cracked about 6 cloves of garlic ( grown in my own Balcony Garden! – How about that for organic and locally grown!!!)
I sealed the meat and the onions in 2 tablespoons of coconut oil, then put them in the slow cooker with 500ml coconut milk (overnight). I woke to a fragrant apartment, and have food for teen ( and she would never know it is healthy and for ME!! I suspect there is enough in there for 6 to 8 meals. Anyone want to join me?
