I promised my friend Lori I would do some cupcake research as a CupCake Bakery has opened in our local shopping centre. Life got in the way- BUT better late than never. Yesterday I collected a couple of boxes of cupcakes. The 12 Box are mini cupcakes in an assortment of flavours – as a thank you to PICU staff for their care of AJ. The 4 pack of chocolate cupcakes are full sized and were for AJ and Dee. AJ loves chocolate!!
The staff at the bakery exhorted all customers NOT to fridge the cupcakes. My suspicion is that this hardens the cake once baked and perhaps crystallises the icing.
The boxing shows the way they are packaged, some of the flavour/colour combinations and possibilities.
I can’t exactly call this healthy, but it is indulgent…. 🙂

Those look wonderful. Yes you are right about it hardening the frosting and possibly crystalizing the sugar- It also dries out the cupcakes and they don’t keep as well.
